Mexican Egg Skillet

To start your day right, choose a hearty breakfast like the Mexican Egg Skillet. It’s easy to make, can be prepared in less than 20 minutes, and will give you a full days serving of essential nutrients including vitamin A, calcium, and protein.  The yummy meal also serves two, making it the perfect breakfast to split and surprise a loved one with. You will need several simple ingredients, most of which you will probably already have in your home. These ingredients include 2 Tbsp. of butter, ½ cup of onion, chopped, ½ cup of green or red bell pepper, diced, ½ cup of mushrooms, sliced, 4 large eggs,  salt, pepper and 1 cup (4 oz.) of Mexican Cheese. The 4 cheese blend provides authentic Mexican flavor with Monterey Jack, Mild Cheddar, Queso Quesadilla and Asadero cheeses, while the taco cheese includes a blend of Mexican seasonings with Cheddar, Colby, Monterey Jack and Manchego cheeses; the choice is up to you. Either way, it’s a good one. You can also choose to add salsa to this recipe, if you desire.

To begin, melt your butter in a large skillet over medium heat. Add your onions and bell pepper and cook for 3 minutes, stirring occasionally. Then, add mushrooms and cook for 5 minutes or until the vegetables are tender, stirring occasionally.  Break your eggs into the skillet and season the eggs and vegetables with salt and pepper to taste. Next, sprinkle cheese over the eggs and veggies.  Finally, cover your skillet and cook for 1 minute, or until the cheese is melted.  Your dish is complete! Serve with salsa, toast or a whole host of foods for a breakfast buffet. This Mexican egg skillet also makes a great brunch or lunch.
