It is quite common for shiitake mushrooms to take stage in a Chinese-style broccoli stir-fry . Less commonly, I have also done broccoli with beech mushtooms. How about baby bella mushrooms for a change in a Chinese-style broccoli stir-fry?
These brown baby bella mushrooms were like an intermediate between brown crimini mushrooms and portobello mushrooms, bigger than crimini but smaller than portobello, size-wise.
Broccoli Stir-Fry with Baby Bella Mushrooms 磨菇清炒西兰花
Start off by sauteing 1 tbsp thinly sliced onions, 2 cloves bruised garlic roughly chopped, 4-5 baby bella thinly sliced, in a pan. When the mushrooms start to shrink a little, add about 3 tbsp chicken stock (or water), cover the pan and allow mixture to simmer for 8 minutes till mushrooms are cooked down. Add in blanched broccoli florets, cover pan and simmer for about 5 minutes till entire mixture is cooked. Salt and ground white pepper to taste.
