Kabocha Squash Millet Congee 日本南瓜小米粥

Congee (rice porridge, rice gruel) is such comforting food. Other than using rice grains, I enjoy using millet 小米 as millet gives congee a smoother consistency.


This Kabocha Squash Millet Congee 日本南瓜小米粥 was adapted from a pumpkin oatmeal porridge 南瓜燕麦粥 recipe from a Chinese recipe booklet that I have.

Cooking this is simple.


Kabocha Squash Millet Congee 日本南瓜小米粥
Ingredients: 1/4 kabocha squash, cut to bite-size; handful of broccoli; 1/2 cup millet; fried shallots (as garnish and flavor)

Directions: Boil some water, add in millet and when the millet starts to boil, add in squash cubes, and allow it to come to boil again. Once bubbling, turn down heat and allow millet and squash to simmer to cook. If mixture gets too thick, add more water. Once millet and squash are cooked, turn off the heat, add in broccoli and cover the pot and let the remaining heat in the pot cook the broccoli. This way, the broccoli turns out perfectly cooked (still crunchy) and not overcooked. Garnish with fried shallots - that adds aroma and flavor too.

NOOOooo...this is not baby food, even if it looks like one. OK. Even if it is baby food, so what? Hee heee...it is my cup of tea!

Great Northern Beans 大北豆

The Great Northern Bean 大北豆 is a versatile bean (legume) since it is mild in taste yet absorb flavor rather well. These beans are good in one-pot soup such as this Mixed Beans Cabbage Soup and Mixed Beans Pork Bone Broth. These Great Northern Beans also form a great bean combo with the other milder beans like the Black Eyed Beans.

Stay at Home No More

Stay at Home No More

Being a stay at home mom was really nice while it lasted but last year we decided we needed to start bringing in some additional income again. It was just as well because I really missed having a job of my own and I knew my husband would love to have some extra money going into our savings account. Anyway, I started writing again for the publishing house I used to work for and it’s been great. I got good mobile broadband service at home and I actually work from my home office most of the time so it’s sort of best of both worlds. I get to be here when my kids get home from school but I’m also doing what I love which is great for my mind and for our bottom line. There’s something to be said for working outside the homebut right now the flexibility of this really suits my needs and I couldn’t imagine not doing something OUTSIDE of taking care of the kids. That was making my brain mush!


"Feast of the Seven Fishes", my way

While the Italians-Americans celebrate Christmas Eve with Feast of the Seven Fishes; to the Chinese, a quintessential fish dish for reunion dinners during the Chinese New Year symbolizes prosperity and abundance.

2011 will end soon with the the New Year 2012 being welcomed, here is my take on "seven fishes" for the new year; AND the Chinese New Year (23rd and 24th Jan 2012) - for all good tidings to come.

As a welcome to the new year, there are new fish dishes featured below with recap of some older recipes at the same time. The past, present and future are part of us. What is your take on whole fish? I absolutely enjoy whole fish and usually get them fresh (and "live") from the Asian supermarket.

(1) NEW: Negi Miso Baked Mackerel (adapted from Negi Miso Chicken@ Nami's - Just One Cookbook ). The sweetened-up of leeks while caramelizing balances the savoriness of the miso - the perfect marinade for this fish when I did not have teriyaki sauce to do the more common/popular teriyaki-glazed fish.


(2) NEW: Braised Whole Tilapia in Soy-Based Sauce with Green Onions, Ginger, Tomatoes, Shitake Mushrooms. My friend calls this "Lazy Man's Fish" 懒人鱼as the fish is not pan-fried (a lazy way of cooking, thus the name) prior to braising. Not perfecto but the flavors are definitely not compromised I can guarantee. I enjoy it a lot!


(3) NEW: Steamed Whole Tilapia with Ginger, Green Onions, Tomatoes on a bed of greens. Steaming is one of the best ways to cook a fresh fish, if you ask me. And to me, this is even simpler to cook than the braised fish above. Well, just for a sake of change and to tamper the taste buds once in a while, I interchange "steaming" and "braising" quite often.


But of course, the convenience of fillets (without the extra cleaning and scaling) as part of kitchen prep. cannot be over-emphasized.


Kiwi U-Pick @Swanton Coastways Ranch, CA

Last weekend, we were out kiwi picking. What? In the middle of December with approaching winter? Well, that's kiwi season. And with the sun lurking out for a while, why not make use of sunshine in a good way? I have not seen a kiwi plant or tree...or rather a kiwi vine?

In case you did not know (cos I didn't), kiwi grows as vines!


They don't ripen till they are plucked off the vine. These are certainly some kiwi facts that I did not know. I was planning to pick (and pluck off) the ripened tender-soft ones. Obviously, there was none.

I have also read somewhere that you can eat the kiwi skins. Yes, the flurry skins. The last time I used kiwi in cooking was to make Kiwi-Mango Salsa. Other times, I just eat kiwi as-is: slice them into half and scoop the flesh off the skin with a teaspoon. Is that how you do it too?

Zucchini, Bell Pepper Quinoa - Christmas colors!

Whenever zucchini is paired with red bell peppers, the Christmas mood comes rollin'...


I am pretty much hooked on quinoa. You should have noticed. It is so easy to create a nutritious one-dish meal with quinoa. Plus, cooking quinoa over the stove-top is so much easier (and faster) than cooking rice. The quinoa cooks in just about 10mins.

Work that in parallel with another dish that cooks in the oven e.g. roasted vegetables...


...then fluff up the cooked quinoa (I used truRoots Organic Quinoa), combine with oven-roasted vegetables (zucchini and red bell peppers seasoned with pepper, coriander powder) -- a transformation to a one-dish vegetarian meal Quinoa Salad with Roasted Zucchini and Bell Peppers in less than 20 minutes.


Indian-Spiced Black Pepper Mushrooms 印度式烤磨菇

They might be humble little mushrooms but one of the most intensely flavored especially when they are black pepper mushrooms; Indian-Spiced Black-Pepper Mushrooms, to be exact.


It was inspired from Indian-Style Black Pepper Chicken cooked by my friend's mom. Indian-Style Black Pepper Chicken will be another day since I have not even cooked the dish yet (though it is in my to-do list)



Chestnuts 栗子, nutrition and benefits

Chestnuts 栗子 are good sources of Vitamin B1, B2 - with sources claiming that Vitamin B2 in chestnuts is 4x more then rice.

Slit a cross "X" before roasting in the oven

Chestnuts also contain essential minerals such as potassium (particularly high in potassium , said to be 4x more than apples!), magnesium, iron, zinc and manganese that maintain overall health;

Considered "heaty" food plus as a good source of vitamins (B1, B2, C) and minerals, chestnuts also help to strengthen the kidney (补肾) and improve blood circulation (活血) especially beneficial in the cold weather (fall and winter) as it nourishes and balances the "yin".


The flip side of chestnuts being high in carbohydrates brings caution to those with diabetic conditions, so, do not overindulge.

For the sake of experience, I did try to roast my own. BUT, I don't think I want to do it again as it takes too much time and is kinda messy if not skilful/experienced.

Snow (White) Fungus Dessert Soup 雪耳, 银耳

I know I know, tThis is not the usual way to cook snow fungus in a dessert sweet soup (Tong Shui - Cantonese, 甜汤 - Mandarin) but....this is not the first time I have used sweet potato in a snow fungus dessert.

Orange cubes are sweet potatoes, not papaya!

I wanted more nutrients in a bowl so that time and efforts spent cooking in the same pot is maximized. So, it is wild snow fungus 野生银耳, sweet potatoes and hulled barley. Weird?

Where to buy and how to ensure snow fungus (Tremella fuciformis, also called white fungus or silver ear fungus) without SO2 (sulphur dioxide as preservative)? Do you know? I don't know.

Hopefully, these Wild Snow Fungus 野生银耳 are different from the typically farmed ones with sulphur dioxide as preservative. At least this was what the shop owner from the Chinese herbal shop told us - No SO2, so we could only give her benefit of the doubt. And one little pack cost USD22! . My friend bought it and shared some with me. So it had better be good, with no preservatives. Yes. For your information, there are wild vs farmed versions of snow fungus.

Now to verify if what we bought was the real thing.

Chili Eggplants (Aubergine, Brinjal) - 香辣茄子

I saw these cute little baby eggplants in my local farmer's market a few months ago, could not resist and fell into the zone of "buy first, think later".


Eggplants are also known as brinjal or aubergine. What name is it, at where you are staying? These eggplants are slightly firmer than the Chinese (long) eggplants. Don't you think their shape resemble eggs?

Other than warm soups and stews, a spicy dish like this Chili Eggplants 香辣茄子 sure walk us through winter at the same time.



Chinese Celery Stir-Fry Bell Peppers 香芹炒灯笼椒

Chinese Celery and Fragrant Tofu Salad 芹菜拌香干 is a Chinese (cold) appetizer I have always enjoyed. Seasoned with toasted sesame oil, sea salt and ground white pepper - it is a refreshing appetizer or side dish with rice or porridge. The Chinese celery sold in Asian (Chinese) supermarkets resembles a huge bunch of parsley cilantro or a slender version of the regular celery. Chinese celery is more often used in Southeast China and Taiwan where they are sometimes also known as Fragrant Celery 香芹, and typically finely diced to generously garnish (and flavor) soups.


Since the weather is chilly and cold right now, I am looking for warm dishes and avoiding cold appetizer side dishes (or salads). This Stir-Fry Chinese Celery with Bell Peppers 香芹炒灯笼椒 is created in the attempt to add to my repertoire of Chinese celery dishes other than salad and soup.

Panettone Cinnamon Bread Pudding

Panettone is kinda "seasonal" as I can only find them in the stores sometime in November and December.


I was delighted to receive 2 boxes of Bauducco Panettone - one with Sunmaid raisins and one with Hersheys chocolates as part of the Foodbuzz Tastemaker Program. I adapted one of the bread pudding recipes enclosed in the package and made a cinnamon-based bread pudding using the panettone with Hershey's chocolates.


Three of my favorite online (shopping) stores - what's yours?

My habit for online shopping only started recently. As you know, there are a few items that are my favorites from Amazon. Crown Prince - Wild Caught Brisling Sardines is one of them. Each tin of good-quality sardines turns out $2.60 (much cheaper than regular retails price ranging from $3.29-$3.69).

I also use an on-tap filter at my kitchen sink and found that these Brita On-Tap Filters are much cheaper than in stores such as Target and Walmart. And you would not have guessed - I bought my first Neti Pot from Amazon. It was recommended by a friend who claims its effectiveness in nasal cleansing - most natural way of removing excess mucous. Nasal dryness might not be an issue in humid Singapore but in California, the air can get kinda dry and effective nasal cleansing soothes/moistens the dried out nasal passage. Plus, all these items are still tax-free at this time for Californian residents (and ships free if qualified for Super Saver shipping ) vs if I buy them in store, I would have to pay for the sales tax which would have made the item much more expensive.

Going forward, I might get the Cuisinart SmartStick Immersion Hand Blender if the Shop 4 for 3 Promotion in Kitchen does work out well. This Immersion Hand Blender is now the #1 to-buy item in my store. While Amazon is  having lots of holiday deals this season, why not stop by for some Christmas shopping?

Fried Wontons (Dumplings)-"Cat's Ears"; 云吞,抄手,猫耳朵

Each region of China has its own wonton - dumpling variation - referred to as 馄饨 (hun tun, Mandarin) in Northern China e.g. Beijing; 云吞 (yun tun, Mandarin) in Guandong; 抄手 (chao shou) in Sichuan.


And fried wontons/dumplings are sometimes known as 猫耳朵 - Cat's Ears!!! Because they simply look like IT.

I usually enjoy boiled wontons (wonton-wrapping video here) since I prefer not to fry them (and do not do much frying at home). However, these were courtesy from my friend (more on "Cat's Ears"at end of post), and I do not reject fried goodness.

Do you think they are gyozas (pan-fried dumplings) or simply resemble gyozas? But gyozas tend to be regularly-shaped vs these...which are not so.

Why Cat's Ears? 为何称它猫耳朵?


Cabbage Stir-Fry HardBoiled Eggs

One of my favorite Nasi Padang (Indonesian cuisine comprising of rice with various sides of meat and vegetable) dishes is a non-spicy cabbage stir-fry with hard-boiled egg bits. I don't know the name of this dish till today (if you know, kindly let me know) but I totally enjoy the simplicity of the dish esp. when you have the other spicy dishes such as chicken/beef rendang, sambal prawns with steamed rice - this cabbage dish brings such a nice complementary balance to the heat from the other dishes.


As I was not having other spicy dishes one day, I decided to make this cabbage dish slightly spicier. So my own rendition of "I-don't-know-what-it-is-called" but one of my favorite vegetable (Nasi Padang) side-dishes.


Why Steamed Eggs fail?

Boo boo boo....boo me for taking shortcuts.

"Pockmarked" Steamed Egg

There is a reason for saying that the simplest ingredients takes in the great skills and experience of a cook because you need to treat it with due details.

I have done perfect steamed eggs (蒸蛋)before...


...and KNOW EXACTLY what it takes to make silky, velvety, smooth-surface steamed eggs.

So I have done injustice to Luv to Eat's Steamed Eggs with Silken Tofu and Conpoy. I like the simple idea of green onions and dried scallops to flavor up the steamed eggs; and know it can be so delicious. I skip the tofu though. But that is probably not the reason of my failure.

This is.

I DID NOT STRAIN THE EGGS. That was the culprit. I DID NOT COVER THE EGGS WITH PLASTIC WRAP while steaming to prevent steam condensation. Another reason for failure.


Potatoes Curried Cauliflower Gratin

It's really easy to use Simply Potatoes. "Simply" says it all. To make this Potato and Cauliflower Gratin, I did not even have to boil my potatoes to cook them first. That surely saved me time.

Combining fresh ingredients with Simply Potatoes* made it even better! And who does not like melted cheese on roasted potatoes and cauliflower? Awwwww...



Rosemary Garlic Potatoes and Curried Cauliflower Gratin
Ingredients:
-1 pack Simply Potatoes* (Rosemary and Garlic Red Potato Wedges) - cooked according to instructions (I roasted mine at 425F ~20 mins)
-1 head (~1 lb) cauliflower, trimmed into florets, blanched for 1 min, cooled then trim further to tiny florets, lightly dusted with about 2 tsps curry powder to coat evenly
- about 4-5tbsps whole milk
-2 slices of cheddar



Chicken and Vegetables Soba Noodles Soup

This is another homey one-dish put together - from a soup base made with chicken, flavored up with vegetables (e.g. carrots, napa cabbage) - Chicken and Vegetables Soba Noodle Soup.


Note: Added last was the red bell pepper - as I wanted to slightly cook it so that the peppers are soft-tender, and does not affect the flavor of the soup. It might become overpowering for the light soup flavor if cooked for too long in the soup.


Note1: then the baby spinach - which I merely blanched in the same soup base for 30 secs then dish out to set aside.


Mixed Beans Cabbage Soup

How was your Thanksgiving? Mine was spent at a friend's place - enjoying duck, two-ways (half roasted, another half braised with chestnuts) and other home-cooked dishes. Delicious! Thanks, friend.

Well. Ok. Thanksgiving is over. No more hard work in the kitchen for a while (at least in the next two days). But eating out 3 meals a day is not an option. A well-accepted idea for busy cooks is to cook one big pot of food and have leftovers for the next 1-2 meals. Sure beats eating out.

Me included. The same but for a different reason.I am the lazy cook.



Roasted Kabocha Squash Stuffed Green Beans Quinoa - Autumn in a Squash Bowl

In short, this is my recent creation - Autumn in a Squash Bowl; or more exactly - Pomegranate Seeds on Roasted Kabocha Squash Stuffed with Quinoa, Roasted Cabbage, Green Beans, Carrots.


No new recipes are involved. Basically, it's a combination of dishes I have done recently: Roasted Green Beans in Turmeric-Infused Quinoa and Spicy Roasted Cabbage, with an attempt to make it more "fall-like" and more wholesomeness by adding spicy roasted cabbage to toss into the "already vegetabley" quinoa mix.

Tip: This is a good way to freshen up leftovers (the veggie-quinoa mix was cooked in huge batch the previous day, and the remainder was chilled in the fridge)

Come today, prepare the fresh ingredients: (1) get ready the roasted cabbage; (2) a half-size kabocha squash (Note: thank goodness the grocery store already slice it into half and I bought that half with no intention of chopping/slicing); finally, don't forget some (3) fresh pomegranate seeds


Looks good to wow your guests, is it not?


Reuse and Recycle Gift-Wrapping

"I'm so learning this!" I said, when I saw that interesting gift-wrapping at Anncoo's blog. I did not have any holiday gift wrapping paper at that time and guess what? I decided to do a Reuse and Recycle Gift Wrap using the recycled brown paper bags from the grocery stores.

How do my "Christmas Tree on a Box" looks?


Even the ribbon and "paper ornaments" are recycled items. For example, the "grape" and "chocolate" ornaments are magazine cut-outs.

Healthy diet, exercise, good quality sleep - cheers to good health!

I had no choice but to stop my exercise (gym) routine when my elbow was injured two months ago. It felt terrible and uncomfortable not moving my body and exercising for two entire months! I am not into Extreme Body Workout - my gym routine (usually twice per week) consists of about 20-min cardio (aerobic) and 15-min weight-bearing exercise. In addition, my goal in exercise is not to lose weight for that attractive Beach Body, for example; rather it is for the good of long-term health. A healthy diet, exercise and getting good quality sleep are essential to good health, did you know?


Holiday Gift Ideas

Who still wears a watch these days? Want the time? Just look at your cell phone or ask the person beside you. Seriously, I am one who still does not use the most advanced cell phone and has gradually lost the urge to wear a watch. Get these gadget(s) away from me, except my computer! Yes, I get the time from my computer and that also explains how much time I spend in front of my computer! When I'm in the kitchen, I tell the time by the clock on the microwave. Not sure if there is anything to do with age but more precisely, it might be the unconscious need to stay away from "being in touch" via high-tech gadgets. Yes, work life has hurt in that sense. The cell phone reminds you of your boss; and a watch means deadlines!


Stir-Fry Kabocha Squash 清炒日本南瓜

Till now, I cannot enjoy fall's bounty of pumpkin, butternut squashes and other winter (hard-skinned) squashes.

This Stir-Fry Kabocha Squash was made months earlier before the accident happened and when I could effortlessly slice through kabocha squash with my right hand. If you do enjoy a simple stir-fry of winter squash, feel free to substitute with pumpkin or butternut squash.



Whether it is kabocha squash, pumpkin or butternut squash, they are all rich in beta carotene, iron and vitamin C ! 

Simply pre-fry green onions, some garlic, add in the diced squash to saute till cooked, then salt and ground white pepper to taste, finish off with finely chopped cilantro.

Basic ingredients and quick cooking rewarded with absolutely delicious, savory and sweet balance of flavors.

Green & Yellow Split Pea Soup

Written about yellow split peas some time ago, and also cooked them in light stews.

Hairy Melon Stew with Green and Yellow Split Peas

Green split pea has a slightly more "pea" flavor, yellow a little milder, but end of the day, hardly noticeable. If nutrients are the concern, don't worry about it as there is no big difference. The color mix is useful mainly for visual presentation - with a mix of yellow and green might complementing the dish better than mono-colored peas, don't you think?

I cooked hairy melon soup (recipe here) again, using a mix of yellow and green split peas this time.


Recently, I have been using split peas in cooking quite often as I find them really easy to use and incorporate in pronto (don't have to soak them overnight like dried chickpeas). Plus, they cook relatively fast without overnight soaking,

Dried peas/beans that requires no overnight soaking and cooks fast - that...is especially useful.

Holiday-themed medical accessories

Roasted Green Beans in Turmeric-Quinoa

The clock ticker above showed just about seven days to Thanksgiving. How are you planning to celebrate Thanksgiving - feasting? shopping? catching up with family and friends? vacation?

I did not know that greens beans is part of the holiday Thanksgiving tradition till I saw various green beans dishes popping up across the web.


What is better than incorporating roasted green beans into a quinoa mixture also filled with roasted bell peppers, carrots? Feel free to adjust the ratio of vegetables to quinoa. More veggies less quinoa or vice versa - it's up to you.

Cook the quinoa over the stove (infusing with pinch of ground turmeric) about 15mins; while roasting the vegetables with spices (turmeric, coriander, red chilli pepper) in the oven 375F for about 20 mins till the vegetables are cooked tender.


Buying Tip: I buy truRoots Organic Quinoa from Costco at about $10/4lbs and that is one of the best deal for quinoa, in my opinion. I used to buy quinoa in the bulk section when initially trying out this whole-grain (or seed) but ever since quinoa has become a "rice-substitute" staple (I have them at least once a week!) together with the other "carbs" such as brown rice/millet for congee; and pasta, I have decided to buy them in bulk quantity (wholesale price).
