Bye bye...canned soup, coz' my Soup's On for Cream of Mushroom!

What should I do with the remaining heavy whipping cream that I've used for the egg tarts ? Even if I bake six more egg tarts, there'll still be more than 1/2cup left. Its (short) shelf-life will soon be up! Use it or dump it!

Soup's On! This is what I did...easy and simple, with a twist. I've never consumed any canned soup yet, since I came here. Of course, Campbell Cream of Mushroom used to be one of my childhood favorites - a comforting dipping soup for that loaf of bread. Sure, canned soups are easy but most have an especially high sodium content (even the low ones are high, is it not?). Since I've found a homemade-way to do it, I can now keep that few cans of soup in my pantry (as part of our disaster kit in this earthquake-prone country).

Cream of mushroom soup (yields 3-4 small appetizer servings)

Ingredients:
-2tbsp butter, divided use
-1/4lb crimini/white mushrooms; clean with damp paper towel, cut half quantity into slices, chop the remainder
-1/2 medium onion, chopped
-1/8 cup flour
-2cup chicken broth/water
-1/2 cup heavy cream
-salt and pepper to taste

Method:
1.Melt half the butter in a saucepan and saute sliced mushrooms until golden. Set aside.
2. Add remaining butter to the same pan, along with the chopped mushrooms and onions. Sprinkle with salt, to taste. Cook, stirring often, until onion is soft
3. Return sliced mushrooms to the pan. Add flour, stir constantly about 2mins, till smooth.
4.Slowly add chicken broth while stirring. Simmer, stir often, till thickened. Add pepper, to taste.
5.Add heavy cream and bring to a simmer (Note:Do not boil)
6.Ladle into mini soup cups or bowls and......................wait wait wait, you can't drink or eat it yet (be patient...) coz' I'm not done with everything !!!

Aiyoh, Tiger, I should tell my mom to come and read your blog lah... her mushroom soup sucks 'cos she always insists on boiling it, then the cream curdles and separates! tell her don't know how many times not to boil she don't believe me! Can imagine or not? Daughter give mother advice on cooking! Haha!

    Anyway, yours looks better and more wholesome than Campbell's!

  5. shilpa, now it's a case of "ginger young one better" and "eat rice more than eat salt" (both translate to mandarin hor...) LOL! I used to eat Campbell Cream of Mushroom, Vegetable Soup, and Mushroom with Potato (all dipped with loti) for breakfast. It's been a while since I've had such soup at home.Next time, I'm going to put more mushrooms, and assorted ones.

  6. Simcooks, I dunno the cup made from what material leh (should be some kind of stone-ware or clay)...I suppose as long as not plastic(or melamine), can put in oven ? Anyhow humtum and put inside oven but did not melt or explode, FORTUNATELY :O
    Most soup mug are not plastic,right? These are my 2 little cups I brought from home.

    RM,baked almond tea with puff pastry on top? where can eat this ? i ne'er eat b4 leh...sounds like Hong Kong dessert since it's 杏仁茶. you make lah...yours always yummy yummy, and pretty pretty one.:p

  12. fleck, it's not difficult to have that puff pastry on top because I DID NOT knead that pastry!:p they are just store-bought puff pastry, so just THAW and USE loh! Now I know how Country Mana make their soup liow! Heeeheee....
    Can't go wrong with mushroom soup if you're at a decent western eatery. Another sure-bet is Minestrone. :D

    ECL,i also have melamine plates...i like them too, very light and almost "unbreakable". But cannot put in oven and microwave(?) leh.
    Go Ikea and buy, shd be quite cheap :D

  17. Tiga, I am slowly clearing my fridge (and my cold) and I made some pretty pretty thingy using all the left over this-and-that in my fridge...are you clearing yours...can get quite creative like that you know, just use the left-over stuff and make something.

  18. RM-you must clear your cold quick. Eat some congee lah, cook those very watery one, if you no appetite to eat the rice/porridge, just drink the "porridge water"...lotsa of Vitamins, and easy on the throat.
    My fridge has got no fresh ingredients liow...:D
