Chai Buey Soup - leftover meat or no leftover meat, they all should have chinese mustard vegetable (芥菜, Mandarin) ? Rasa Malaysia has the "leftover meat-chai buey soup" version here.
But I do not have any meat leftovers. I just happened to see pickled sour mustard(chinese mustard greens) on sale in the Asian supermarket (2 packs @ $0.88), so I decided to buy them even without planning ahead what to do with it. How many of you do buy on impulse, even for groceries ? Even though I keep a grocery shopping list and bring it along whenever I visit the supermarket, I still end up with things I have not initially planned for. Wonder if it's just me...do I need more self-control?
In that same shopping trip, I decided to add on to my grocery list - some tomatoes (I recall tomatoes and sour mustard greens do have a "affinity" for each other), and the cheapest cuts of pork (since I only wanted to use it for flavoring) . And of course, I ended up spending more than what I've budgeted for. Wooo...
Chai buey soup (serves 2-3)
Ingredients:
-1pkt chinese mustard vegetable, sliced
-2 medium size tomatoes, cut into wedges
-1lb poultry (chicken or pork, any cuts you prefer)
Method:
1.Blanch pork to remove scum
2.Place pork and mustard in the slow cooker
3.Cook on high for 1 hrs
4.Turn to low, cook for 1-2 more hrs
5. Add the tomatoes early if you like it soft, add it 30mins before turning off the slow cooker if you prefer the "crunch"
6. Dish soup in a bowl whenever you are ready for drinking
A simple soup to make if you like sourish savory soup. To spice it up, red chilli (dried or fresh) can be added. This soup also go well with bee hoon (rice vermicelli), making my quick and easy bee hoon soup.

We call it giam chai (咸菜)thou it is both sour and salty. In fact, there are people (hakka ones) who like to use it as fillings for kuehs.

i love kiam chai and szechuan chai. my fav. i have them now in my fridge. waiting to be cooked. LOL...

omnivore,too many kinds of preserved vegetables liow. There are kuehs I've eaten before with 雪菜 and beacurd. And those that your mom makes..yummy.

simcooks, so chai buey and kiam chye is the same thing ? but when i order "chai buey" dish in Teochew porridge stall, they taste different from kiam chye. Maybe kiam chye is also mustard greens, just seasoned with MORE salt, so that kiam kiam :O
keropok man, tell me what is good kiam chye or szechuan chai leh...i wld love to look for them here...:O

I love szechuan chai in those soup, also paired with tomatoes and pork(ribs) usually.
Oh I think I know what you are talking about now when you say "Teochew porridge stall". Sometimes you get the same thing in Bak Kut Teh stalls also right?

ReplyDeleteTiga ar, I telyu, next time you go buy those siu yok from the BBQ shop a few dollars, then taruh them with your kiam chai or gai choy and such, becomes chai buey immediately.

ReplyDeleteMy "1st claim" for chai buey is "ANY vegetables seasoned or preserved in various ways, such as adding salt, soaking in acid, and any other methods that are considered food-safe" ...that way chai buey can be chai buey or kiam chye....LOL!

ReplyDeleteWhy need shopping list? I always buy whatever's available. Then I think of how to cook with it. More challenging ma.
Of course, sometimes when the guys at home want to eat a certain dish, then I look for the ingredients.

In Sg, no need cos I no need to cook! Your style only for expert lah, not me. When I go Carrefour, Giant, Cold Storage, it's mainly c c look look and buy snacks only...heh heh...
