Baba coriander chicken (serves 4)
Main ingredient:
-2/3 lb chicken (I've used a mix of thigh meat and drummettes)
Chicken marinade:
-sprinke of salt
-1tsp sugar
-drizzle of sesame oil
Ingredients A:
- 2-3 cloves shallots, peeled
-1 small piece young ginger
- 2-3 cloves garlic, skinned
Ingredients B:
-1 stalk lemon grass, bruised(use bottom 5cm only, white part)
-1tbsp coriander powder
-1tsp white peppercorns, pounded coarsely
-1/2tbsp oyster sauce
-1tsp dark soy sauce
-some water
Method:
1.Marinate chicken with salt, sugar and sesame oil for 15 mins. Meanwhile, use food processor to chop shallots, ginger, garlic coarsely
2.Heat oil in wok at medium het. When hot, stir fry lemongrass and chopped Ingredients A till aromatic
3.Add in remaining Ingredients B including marinate chicken, bring to boil
4.As soon as mixture starts to bubble, lower fire to simmer till chicken is tender and gravy thickens

ReplyDeleteTiga, I forgot to tell you I had Chili Crab in SIN before Beijing...a secret, I had never tasted Sri Lanka crab, sooooo very good, beats Dungeness Crab hands and pants down...the two giant claws and the meat very shiokalicious.

ReplyDeleteThis is an easy nyonya recipe (compared to ayam buah keluak that needs lotsa work). Do try it(has your favorite...lemongrass!).
I don't see any peranankan restaurants serving this dish though. So another reason to DIY.
RM, you never had Sri Lanka crabs???? The chilli crab, pepper crab, curry crabs in SIN almost 99%...Sri Lankan Crabs! Big and fat! Cannot compare them with Dungeness lah! (The only good thing abt Dungness is the shell is not as hard...so can bite on them to savor the crab meat. For Sri Lankan, must use crab pincer if not after eating crab, become *bo gay* liow)

There are few spices as fragrant and tasty as coriander. I love it! And with the lemongrass (which I also love), it must be fantastic!

Something like that...the chili crab sauce a little too starchy for my taste but I went for the crab lah...wah, so shiok...ok ok, we have a date, next time we go home together...okay? MW,in S'pore,I stayed where there are lotsa of Peranankan,Nonya/Baba, and even Eurasian food!Yum yum! Think white peppers will do too, but have to put a lot coz the white peppercorns quite power you know ;p

Patricia, can you get all the ingredients? How do you make tea with lemongrass-is it just the usual tea then add in a stalk of "bruised" lemongrass just for the citrous flavor? I mentioned lemongrass iced tea in my earlier post on Thai-Style Tofu :D
ReplyDeleteI went to a wedding before and one of the free flow, non-alcoholic drinks was lemongrass tea. It was delicious...it tasted like lemongrass infused with a bit of pandan leaves/screwpine. It's just so refreshing when it's cold :)

ReplyDeleteI knew baba meant dad b/c that's what my cousin's kids call him. :) But since coriander is cilantro seeds, would it be overkill to add chopped cilantro to the top? Would add a nice bit of color.
ReplyDeleteWandering chopsticks, a lil' chopped ciltantro as garnish shd be fine but coriander seeds and leaves taste and smell totally different (though from the same plant). The leaves may not blend well with the peppery and earthy flavor of this dish.

Hi patricia, you mean lemongrass leaves? Hmmm....I think what I've had is the normal iced tea with a stalk of lemongrass.
