Cider chicken stew

A simple stew of crock-pot wonder. While others might have used apple cider or cider from the wine/beer/alcohol aisle, I have used some spicy cider from the juice aisle. The cider contains spices such as cinnamon...so it gives the chicken stew an aromatic flavor while it is slow-cooking.

Chicken Cider Stew (serve 4)
Ingredients: some chicken thigh meat, carrots, potatoes, onions, spicy cider juice, pepper, cornflour

Method:
1. Heat some oil in a pan, and saute the onions till soften
2. Add chicken, carrots and potatoes, and fry for 2-3mins. Sprinkle some cornflour over this mixture and mix well

3.Add spicy cider juice and pepper. Lightly stir till mixture thicken
4.Add the mixture into a slow-cooker or crock pot and cook on high for 45mins. Then turn to low, and cook for another 1 hr

  1. Hmm... I wonder if there's an even shorter way of doing this, without cooking the meat and veges first? I stay in a studio apartment with no stove to cook with, just a microwave oven I use to reheat food. If I got a slow cooker / crock pot, I might be able to come home to a nice warm, home-cooked meal for once! :D

  2. kenny, yes, you could! I've done it many times on beef stew - just "dumping" everything into the slow-cooker and let it do the magic for me. It works! It works! You should really invest in a slow cooker / crock pot. Very versatile - can cook wholesome nutritious soups too! And so easy as one-dish meal :P

  4. Wokandspoon, me too loves one pot dishes. So easy, lazy but does not make it unhealthy.
