Almond buttered soba


Nuts contain antioxidants and phytochemicals including flavonoids and phenolic components. Almond and almond skins are known to contain flavonoids which are a large group of plant nutrients found in wine, tea, fruits and vegetables. Almonds also have the highest protein content of any nut and are rich in minerals, magnesium, potassium, phosphorous and especially high in calcium. Do you know...almonds contain a high degree of oleic acid, which is believed to be the ingredient in olive oil that protects against heart disease?



I'm going to add lots of almonds in my almond buttered soba to make it antioxidant-rich at Sweetnicks.

A generous sprinkle of sliced almonds add a completely different dimension to the dish. It adds a very nutty-flavor and an additional depth of texture (the crunchy bite!) while you slurp on the smooth soba.

Almond buttered soba
Ingredients:
-1 serving soba, boiled 6-8mins and set aside
-1-2tbsp almond butter (mine is from Trader Joes. Substitute with peanut butter if you wish)
-1tsp crushed ginger
-drizzle of sesame oil
-cucumber, julienned
-1 stalk green or spring onions, chopped finely (save a "pinch" for garnish)
-sliced almonds

Method:
1.In a mixing bowl, add in all ingredients except the soba and tomatoes, mix well
2.Add in soba noodles and toss well
3.If too dry, add some water (Note: you could used the water used to boil the soba)
4. Garnish with sliced almond, and spring onions

  2. Oooooh, interesting recipe! I've never used almond butter, believe it or not, but I do have peanut butter in my pantry so might try to substitute for that. I love soba!

    I've been gathering nuts and keep a big bowl on the counter all winter for munching, in their shell to discourage gobbling....
    I've been thinking about making hazelnut butter - or Nutella...

    wilfrid, depends on what nuts and how they are prepared. Not all nuts are healthy.
    I don't think I have seen almond butter in S'pore. But again, things might have changed :P
