Kaya is a jam flavored by pandan leaf and sweetened with sugar, made from coconut milk and chicken eggs. The spread originated in Southeast Asia, most likely Indonesia or Malaysia.
Kaya is sweet and creamy, available as a golden brown or green colored spread depending on the amount of pandan and extent of caramelization of the sugar. As with other jams, kaya is typically spread on toast and eaten in the morning or for tea breaks. This toast, also known as kaya toast where essentially kaya and usually butter are spread on two pieces of preferably toasted bread, has gradually made its way as a popular snack in Singapore and some parts of Malaysia.
This kaya (coconut jam) + butter sandwich toast is even served as a snack or tea set: with half-boiled/soft-boiled eggs

hahah this toast is a staple la in malaysia as well..but i prefer the darker green version..i reckon the light green comes from colouring..

ReplyDeleteThere are a few brands of kaya available in the Asian groceries around here...most of them are not terribly good. The best kaya I had was made fresh in small batches by a vendor in Penang...awesome!

las montanas, there are many versions around. Some are very sweet and taste like sugar!
Some are milder, and can taste the egg, coconut milk, and pandan leaf.

nate, yes...the best one in S'pore are home-made and sold in small batches in local bakeries. They run out fast!

ReplyDeleteI feel likeI'am one of the "kopi soh" when making the kaya toast breakfast set... toast, coffee and eggs, all has to be done in 10 minutes so that the toast stay crispy, coffee and egg stay warm when served. Busy ah soh... :D
