I used to think that there is just one variety of green beans but apparently not. After trying Haricot Vert, I actually prefer them to the usual.
Unlike green beans omelette (adding diced green beans to eggs), this technique of adding egg into this green beans dish is to add soft bits of egg for that balanced texture of squeaky crisp green beans and soft-cooked fried egg bits. To perfect the balance and texture, the green beans could have been diced; however, my preference is to leave them as whole green beans here to showcase the crisp and freshness.
Garlic Haricot Vert with Egg Scrambles and Chili 四季豆炒蛋
Heat a little oil in a pan, saute 2 tbsp shallot or red onions till slightly translucent, then saute 1 tbsp minced garlic for about 2 mins, pinch of red chili flakes, then add haricot verts(or green beans), 1 tsp soy sauce and saute low-medium heat for about 3 minutes, then add 1-2 tbsp water, cover pan to simmer and allow steam to cook the haricot verts. when tender, slowly add in 1 beaten egg (already seasoned with ground white pepper) and break them into tiny bits while cooking in the pan with the beans. add 1 red chili (bird's eye chili) thinly sliced, then salt and ground white pepper to taste
