Flax Oil, Vinegar, Honey Chickpea Salad 嘴豆沙拉

Fresh. Herbaceous. Balanced.

Chickpeas (a.k.a Garbanzo beans, or commonly known as Channa in Indian cuisine), red bell peppers, red onions (or shallots), and fresh parsley or cilantro are easily available ingredients from the grocery store but their nutrition and natural flavors are not at all ordinary. The dressing is also quite an extra-ordinary blend of organic cold-pressed flax oil, organic raw apple cider vinegar and raw honey.


Have you heard of raw, organic apple cider vinegar with "mother"?

"Mother" (Or Mother of Vinegar) is the enzyme that settles at the bottom of the bottle, and is part of the normal production process with natural apple cider vinegar. Apple cider vinegar is anti-fungal, anti-bacterial, and anti-viral and is often used for detoxification and cleansing.The most common brand will be Braggs Raw Organic Apple Cider Vinegar, but I am using organic, raw, unfiltered apple cider vinegar from Dynamic Health which is equally good in my opinion.

Do you also know that processed honey has been heated and filtered, thus loses its various vitamins and minerals and live enzymes? Organic, raw honey provides numerous healing and nutritional properties. However, since raw honey has not been treated, it is reommended NOT to give them to infants and kids (Source: SFgate)



As you might have heard, flax seeds is a rich source of lignans; which are converted to substances that balance female hormones to reduce menopausal symptoms and possibly help prevent breast cancer. It is also high in Omega-3 fatty acids that protect against inflammation. It is typically recommended to consume flax seeds in ground form as ground flax seeds are better digested by our body. We can also consume flaxseeds as flaxseed oil by adding flaxseed oil to blended beverages and salad dressings.




Flaxseed Oil, Apple Cider Vinegar and Honey Chickpea Salad, recipe is adapted from Livewellnetwork
1 canned organic chickpea, drain away water and rinse a few times to remove foam/scum
1 small organic bell red pepper, finely chopped
Handful of finely chopped cilantro
3-5tbsp finely minced red onions or shallots

Dressing: 1-2 tbsp organic apple cider vinegar
1tsp raw honey
1/2 - 1tbsp flaxseed oil

Directions: Lightly whisk the dressing, set aside. Prepare the chickpea, bell peppers, shallots and herbs in a deep salad bowl. Gently add in the dressing, and toss/mix them well. Serve chilled.
