Stir-Fry Shrimps and Vegetables Medley 虾仁清炒蔬菜
Ingredients:
To thaw: 1/2 cup frozen organic edamame, 1/4-1/2 cup organic sweet corn, and 6-8 medium- or jumbo-sized shrimps (if using frozen version).
To chop, mince and dice: 1/4 medium-onion, 2-3 cloves garlic, 1 thin-slice ginger, 1 stalk from bunch of organic celery, 1 chayote, 1/2 organic carrot, 6-8 thawed shrimps
Directions: Saute diced shrimps first to impart shrimp flavors to the oil in the wok. Set aside the shrimps, then sweat the diced ginger, onion, then add diced/minced celery, carrot, garlic, chayote, edamame, corn. Fry for about 10 minutes or more, till ingredients are cooked, add the shrimps, then salt and ground white pepper to taste. A drop or two of sesame oil at the end, if you wish, for fragrance.
