Bean Sprouts - stir fry Chinese- or Indian-style? A battle rattles

I am not a big fan of bean sprouts, frankly, as I have incidents of eating raw sprouts; and completely...absolutely...hate that raw taste. Maybe it was due to the unpicked roots? So tell me if you bother to remove the roots.

Nope. You shall not have salted fish to flavor up this dish. When that happens, what will you do?

How about a Chinese stir-try done simply with green onions and ginger?

-OR- a recipe using Indian spices of cumin, turmeric, then finished off with salt and black pepper ? Oh, you can add some firm tofu cubes to add more protein to the dish if you prefer.Or you can try Rasa Malaysia's version - bean sprouts with tofu puffs.

This Indian Spiced Bean Sprouts with Tofu is good with steamed rice.

Salted fish is flavorful I know, but it is not all healthy (so much sodium!). Just do not use it excessively.

Aside from the fact that I am not a fan of bean sprouts, they are rich in digestible energy, vitamins, minerals, amino acids, proteins, beneficial enzymes and phytochemicals. This sprout of a legume and tofu made from legume -soy beans, in this Indian Spiced Bean Sprouts with Tofu recipe should fit the vegetarian theme of My Legume Love affair or MLLA - 19 - an event originally created by Susan of  The Well-Seasoned Cook.

  1. I don't really love bean sprouts either. They just don't seem to have much flavor going for them. These recipes sound like good ways to incorporate them into my diet, however. They are healthy after all!

  3. I love bean sprouts. It's great when given a quick stir fry that leaves it still crunchy. It's very delicious stir fried with ginger. Of cos it's nice with salted fish...once in a while :P

  4. I don't like my bean sprout soft like that, I like it crunchy. I don't buy salted fish but living here I found an alternative, next time try to use ikan bilis in addition to ginger and scallion. I have recipe in my blog too.

  5. I don't like raw bean sprouts either, don't like the grassy taste but I can go either way, roots or no roots. If lazy, roots, if not lazy, no roots. But if you eat hawker food, they never remove the roots!

  6. You mean the sprout portion (yellow) right when you are talking about "roots"? I think I would like either version of these bean sprouts. They both look fantastic!

I make my bean sprouts easy peasy with garlic, scallions (sometimes), and salt. Or put them into a broth to enjoy.

Is it a coincidence that I and another person talked about a restaurant named bean sprouts and two people wrote two posts about bean sprouts the ingredient in the past 2 weeks?

  8. LCOM, I like it "just nice" - not too crunchy (which means -too raw) and not too soft (too mushy) ;O

Bee Yinn, if I SEE that the sprouts look raw, I will actually try to pick them out from the bowl of noodles that the hawker center serve me. If it's done ok (usually fried item like hokkien mee and CKT will have the sprouts done nicely cos of the high heat in the wok, I suppose), then I will eat it. Hahahah...fussy right?

  9. hey same here. brother played a prank on me when I was young where he bluff me to eat raw beansprouts, I've since developed an aversion to them. But I can eat my own stir fry beansprouts now coz I cook it just nice (not too raw and not too mushy) and of course I mask the taste with lots of salted fish hahaha

  10. I like my bean sprouts crunchy. So, I usually toss them the last minutes of my stir-fry.
It is very important for me to remove the roots - even though they are time consuming, I just have to have them removed. Probably how home cooking supposed to be I reckon.

  12. I love bean sprouts but have heard lots of negative comments on how the suppliers grow them. Still haven't cooked it at home.

  14. Love eating bean sprout! ;)

Don't be surprised when you eat food street in Indonesia that consisted of bean sprout, they all don't bother to remove the root at all. In fact, I also don't remove the root when I cook it as long as I wash them properly, hahaha...

  15. I HATE raw bean sprouts! They have to cooked, otherwise I won't touch them! Salted fish is a great seasoning, and so is dried shrimps/udang kering. Great, healthy dishes you made!

  16. Oh but I LOVE bean sprouts! Maybe not 100% raw but lightly blanched in hot water or stock and it's still crunchy and lovely... :D

  17. I think your Indian twist of stir fried bean sprouts is great! I also wonder how to cook them differently rather than just in the chinese way. Yours is a nice veggie dish but would not taste plain at all.
