Chicken (Green Onions) Macaroni - Soup Leftover Revival !

There is nothing new. I adore chicken soup and has been gradually more fond of it. I do many versions of chicken soup lately and seldom have leftovers. If bumped into leftovers, I like to "freshen" it within days (less than a week) by making another simple one-disher. Macaroni always calls me home.Am I a kid or what?

A little (garnish idea) goes a long way. I remember having Japanese Ramen with lots and lots of green onions, so nothing is simpler than reviving a leftover chicken soup by using lots and lots of green onions and make the chicken soup taste a little different (but still good) on the next day.

So there is chicken macaroni soup with green onions garnish; and chicken macaroni soup with green onions as the star ingredient.

Chicken and Green Onions Macaroni Soup
Recipe (Ingredients and Directions) available here. A lot of green onions are added for this, that's all.

There is also chicken macaroni soup that I love to garnish with red chili slices and fried shallots. Woooo...so good. Leftover Presto Pasta Nights goodness Served with Love (this week's host).

What is your favorite way of garnishing a good chicken soup, if you really bother to garnish? ^o^

Holy Macaroni,
This is one comfort food for me;
Carrots and celery do some trick,
There is no secret and hidden tip.

  1. Macaroni in chicken soup is great comfort food! Last week I had it for lunch on 3 consecutive days because I was down with sore throat and din wanto join my colleagues for lunch. Hahaha... did you compose that 'Holy Macaroni' rhyme? noticed you had it on your other macaroni post too ^^

  2. Ughhh... I'm Asian, but this green onion combination would not with my palate nor does it appeal visually. If you wanted to add greens, why not mix the chicken base with pureed spinach until you get a soupy green consistency?

You can also deconstruct pesto and make a broth out of it, minus the pine nuts. Macaroni in a pureed basil and garlic broth with a sprinkling of parmesean and olive oil. That would be tasty.

  3. Anonymous, I love my greens as whole and prefer not to puree it. The green onions combi was inspired from Japanese Ramen - ramen with just pork broth and heaps of green onions. Sorry you did not like it.

  6. Thanks aquadaze, I would not have thought it was a fusion recipe. I recalled watching a TV pgm introducing ramen in Japan and there... they have those roadside stalls where people just happily slurp the ramen served in pork broth and loads of green onions. Somehow got inspired by that. :D

  8. So healthy and wholesome. My kids would love this. If it were me, I must a saucer of chilli padi in soy sauce next to me.

  9. Ju, I think your kids may prefer this without the green onions. Well, not many can take so much green onions at one serving! :p

  10. peachkins, adding milk to chicken macaroni is new to me. But we enjoy fish soup with bee hoon when milk is added to the fish soup. Hmmm...so maybe it is not a weird idea after all.

Juliana, I like cilantro as well, better than green onions, if I had a choice. Well, that day, I had no choice. ;O

  26. Garnishes are never a bother, just as condiments on a burger or dog aren't either. You gotta have 'em. It's like how the right accessories with a cute dress make the outfit pop even more.
