The actual "classic" in some Indian families is to deep-fry the cauliflower but you know I seldom deep-fry at home, so I kinda adapted it to the roasting method. Turns out very well and I love it. I actually love how Indians cook their cauliflower - this spiced-roasted cauliflower, and the Potato Cauliflower (Aloo Gobi) etc...I enjoy them all...
Oven - Roasted Cauliflower a la Cauliflower Goreng (Deep-Fried Cauliflower)
Ingredients: blanched cauliflower florets, dried on kitchen paper towels; [Seasonings]: pinch of cumin, fennel, turmeric, paprika/cayenne pepper, salt and black pepper, a little butter; 1-2 tsp cornflour; some butter to "oil" the roasting pan

Directions: Add cauliflower florets into deep mixing bowl, sprinkle seasonings (including a little butter) over, cover the bowl and mix well ("shake shake shake") to thoroughly season the vegetable (Note: you can add everything to Ziploc bag, make sure it is sealed tight, then shake the bag to marinate the vegetable). Add cornflour, mix them well with seasoned cauliflower and make sure cornflour thoroughly coats the cauliflower (see above photos). Preheat oven to 400°F, then roast the vegetables for 15 - 20 minutes, or until the cauliflower is lightly browned and turns golden.

ReplyDeleteI enjoy broccoli equally but I guess it has got to do with the cooking method. Someone, I prefer broccoli blanched or in a simple stir-fry. Cauliflower seem to shine more with spices. So maybe the tendency to like either of them lies in your usual/preferred cooking methods at home?

OH YEY! Congrats to Anncoo for winning :) I love reusable bags, those plastic bags are annoying as they pile up endlessly in my kitchen cabinets. I always love roasting cauliflower, it gives you that nutty sweet smokey taste -- divine!

My favorite way of eating cauliflower is to roast them, too. Other than brussel sprouts, cauliflower is my favorite roasted veggie! It smells a bit bad roasting in the oven though! lol.

ReplyDeleteyou can do olive oil too - i find the spritzer kind to be particularly low-carb & -cal. you don't need the flour either, with a teeny bit of oil the cauliflower does just fine, even at 500 degrees. (i do marjoram, pepper & pinch of salt, but i'm excited to try your version.)

ReplyDeleteYou can try skipping that. I have actually done it without the flour a few times. They are equally tasty, just less crunchy bits(supposed from the flour).
Do I put the ziploc bag containing the seasoned cauliflower inside the oven to roast. Sorry for asking. I'm a novice cook.
ReplyDeleteNo no, you can't do that. Ziploc bag cannot go into the oven. After seasoning, please pour them out into a baking tray that can be also lined with a Aluminum foil.
