Without using meat, mushroom is an ingredient that adds earthy flavors and "meaty" texture to a vegetarian dish.

To complete the entire stir-fry with less oil, I have used the partial stir-fry-steam method, which is to cover the pan or pot and allow the steam to finish off cooking the vegetables in the process of stir-frying.

Broccoli Oyster Mushrooms Stir-Fry
Ingredients:
2-3 cloves garlic, minced
1 red chili, thinly sliced
1/2 cup thinly sliced organic carrot
2-3 oyster mushrooms, thinly sliced
Handful of organic broccoli florets.
Directions: Fry the mushrooms, garlic, carrots, chili till mushrooms are almost cooked and becomes tender. Then add broccoli and fry in low-medium heat, cover the pan and allow the steam to full cook the broccoli and mushrooms. Salt and pepper to taste, and finish off with 1-2 drops of toasted sesame oil over the vegetables
