
Avocado, mashed and smeared on the bun, replaces the oil-based dressing used in this chicken salad sandwich.
This can also easily come together as salad without the bun (carb-free option).

Avocado, Cucumber, Kale Chicken Burger
Ingredients:
Leftover shredded chicken (from store-bought rotisserie chicken)
1 cup organic kale, leaves only (keep the stalk for making stock/broth, soup, stew or simply steamed with other veggies when making veggie bowls), rinsed and pat-dry (or use salad-spinner to spin-dry the kale leaves)
Few thin slices of cucumber
2-3 thin slices of avocado
Hamburger buns
Directions: Assemble and build the burger as shown.
