Besides 15-minute Flour Tortilla Chips, you can also make delicious crisp-outside soft-inside egg pancakes or Chinese DanBing 蛋饼 from leftover flour tortilla.
Enjoy the pancakes as-is or if you prefer, you can also fill them up just like how you would do to a wrap.
Tortilla Egg Pancake Danbing
Ingredients:
1 flour tortilla
1-2 eggs, gently whisked, divided use
1 green onion, thinly sliced, divided use
1 tbsp olive oil
Salt to taste
Directions: Heat olive oil in pan. Pour half of the whisked eggs into the pans, and some green onions, salt to taste, then layer the tortilla on top and wait for the egg at the bottom to crisp up and set. Add remaining eggs by spreading it uniformly over the tortilla. When the egg layer on top has set and slightly firmed up, flip to the other side, allow eggs on top side (now at the bottom) to crisp up.
