Chicken, Kale & Beets Bowl

Some of my favorite ways to prepare kale include stir-fry steam or blanch. For today, let us enjoy blanched kale in this Chicken, Kale and Beets Protein Bowl.

Chicken, Kale, Beets Protein Bowl
Ingredients:
Leftover rotisserie chicken, shredded
As much veggies as you like: broccoli, carrots, cabbage, kale
2 cloves garlic, finely minced
Store-bought cooked beets, sliced
1-2 tbsp of extra-virgin olive oil

Directions: Reheat leftover chicken. Cook (stir-fry/steam) cabbage and carrots with minced garlic, salt and pepper to taste. Blanch broccoli about 2 mins , and kale about 1 min. When vegetables are done, dish out as base layer in bowl  then add shredded chicken over vegetables (Note: rotisserie chicken is already seasoned with lots of flavor, so minimal seasoning/dressing is used in this dish) . Top with cooked beets. Drizzle EVOO over, gently toss and enjoy.
