Sesame Chicken Salad

Made with in-season sweet corn, fresh crisp cucumbers and juicy tomatoes, this Sesame Chicken Salad is easy to put together and very delicious (addictive!) to enjoy especially in the summer months.


It is also the perfect summer protein bowl, created with everyday easily available produce and one the most versatile leftovers - chicken breast. Sesame Chicken Salad
Ingredients:
1 sweet corn, steamed to cook. When cooled, slice or cut corn kernels from the cob by running a knife, downwards,  close to the base of kernels
2-3 mini Persian cucumbers, sliced
6-10 cherry tomatoes, sliced into halves or quarters
Leftover shredded chicken breast, reheat
1-2tsp sesame oil
1tsp soy sauce
Dash of ground white pepper

Directions: Prepare the ingredients accordingly, add the seasonings, mix and toss well.

  2. I thought you stopped blogging too. Over the years, I have seen so many food bloggers from Singapore and Malaysia giving up...:-( It's really sad. Blogging has been challenging with all the technical issues. I just noticed that my feed doesn't work properly again..the newest post still hasn't popped up...sighs...On a happier note, the salad looks nutritious and delicious.
