Snapper En-Papillote/ Parchment-Steamed Fish

A quick. easy and healthy weeknight dinner fix with this Snapper, Swiss Chard, Lemon En-Papillote/Parchment-Steamed Snapper.

The fish and vegetables selection may vary due to availability and preferences e.g. Salmon, Zucchini, Carrot En-Papillote or this Cod, Artichokes, Tomatoes En-Papillote.


En papillote or parchment cooking is one of my favorite (if not, my favorite) ways to cook fish; and other seafood too, like this Seafood Shrimps and Clams Parcel.


Sauteed Chard Pasta 蔬菜意大利面

A tray of green beans, mushrooms and onions was sent into the oven while roasting the butternut squash; and the cooking pan holding all the Swiss chard was to serve "two purposes"  - Roasted Squash with Sauteed Swiss Chard; and this dish - Roasted Green Beans, Mushrooms and Sauteed Chard with Pasta.

So...now...why do I have to involve two steps - roast and saute?


In short, the oven could accommodate more than the cooking pan at the instant, so "equipment" utilization is flexed around in order to achieve two dishes (the other dish here) within the shortest time.


Roasted Squash with Chard 烤冬南瓜拌叶甜菜

What? The organic butternut squash is cheaper than the conventional butternut squash in the grocery store?!?!

Take home message: it pays to take a good look at the price tags/labels, every time. Don't make assumptions that organic is always more expensive than conventional.



Spicy Sausage with Chard, Kale, Green Beans

These are Pork Bratwurst Sausages (without nitrates, without MSG) made fresh, from Sprouts Farmers Market. Once in a while, look out for their 72-hr sale (usually happens Friday, Saturday, Sunday ) in Sprouts Farmers Market  - and that is about the only time I buy their sausages (usually $2.99/lb vs $1.99/lb during the sale). Of course, the sausages don't look like what you are seeing in the photos (below) when sold in their stores. That is just what I usually do when I cook them - break them up into smaller bits and pieces and stir-fry them with vegetables such as kale or chard.


Serve as a side with rice, or toss into cooked pasta to make a one-dish meal. You can also fill up a hot-dog bun (a twist from this Chicken and Kale Hot Dog) or create a pita-bread veggie-meat wrap.
