A nutritious protein bowl easily prepared and put together with store-bought smoked salmon (found this good quality Cambridge House smoked honey-roasted salmon from Costco), sliced cucumber, turmeric quinoa, and leftover chimichurri tofu.
Smoked Salmon, Cucumber and Quinoa Bowl
Ingredients:
1 pack smoked salmon, break into bite-size pieces
2 Persian cucumber (or any variety you prefer), thinly sliced
Turmeric quinoa, batch-cooked for the week, reheat/warm
Directions: Top smoked salmon and cucumber over quinoa (option to replace quinoa with 1-2 servings of steamed vegetables).
