Shrimps, Eggs, Tomatoes, Broccoli Bowl

Shrimp bowl is one of my favorite bowls to make because it's quick, easy and delicious. Quick because it takes much shorter time to cook shrimps than chicken or fish. Easy because it just needs basics like salt and pepper to bring out its flavors. Delicious because IT JUST IS.

If you also enjoy shrimp bowls (be it shrimp grain bowls, shrimp veggie bowls), I hope you can find some quick inspiration.

Do you currently own an air-fryer? I do not and still using conventional oven or sometimes toaster oven to do all the baking, roasting and grilling.

While cooking the shrimps in the oven, make sheet-pan eggs or ramekin eggs at the same time in the same oven.

Ingredients:
5-6 peeled, deveined shrimps, lightly seasoned with pinch of salt, pepper, curry powder, dried oregano
5-6 cherry/grape tomatoes
3 cups of broccoli florets with carrot sticks/slices
1-2 cloves garlic, finely minced
1 egg, hard-boiled, sunnyside up, oven-baked (any way you prefer)

Directions: Preheat oven 375F. Bake the shrimps and tomatoes about 15-20mins till cooked. At the same time, bake the egg in a ramekin in the same oven. Steam vegetables with garlic for 5mins. When done, serve the shrimps with the veggies.
