One-Pot Shrimp Quinoa

Umami shrimp flavors is infused with quinoa while the shrimps cooks. Other one-pot wonders include One-Pot Tomato Rice and One-Pot Turmeric-Spiced Rice.

Leftover shrimp quinoa can be used for shrimp protein bowl the next day.

One-Pot Shrimp Quinoa
2-3 servings of quinoa
16-20 small/medium frozen (peeled, deveined) shrimps, thawed overnight
Pinch of spices, and dried herbs e.g. paprika, black pepper, garlic powder, dried oregano

Directions: Use rice cooker or cooking pot over the stove, place measured quantity of quinoa into pot. Add water (grains to water ratio as suggested on package) to the pot. Place seasoned shrimps on top of grains. Turn on rice cooker to cook the quinoa (and shrimps). When shrimp quinoa is cooked, add it as one component to protein/veggie bowl or enjoy with a side of stir-fry veggies if you prefer.

Leftover shrimp quinoa can be used for protein bowl the next day.
