Duck Protein Bowls

With inflation, the price of Maple Leaf Farm Roast Half Duck has also gone up at our local Costco. Last checked - two individual 14-oz packages (total 28oz, approx. 4 servings) is now $19.99. We will not be buying it anytime soon; perhaps until the next special occasion when there is a reason to splurge.

But honestly speaking, even at $20 ($5 each serving), it is still cheaper than any duck entree in restaurants.


Meantime, depending on my freezer stash of remaining ready-cooked vacuum-packed roast half duck to make delicious protein bowl - roasted duck with freshly steamed vegetables, and sweet potatoes; or go lighter without potatoes and opt for roasted tomatoes.


Roast Duck Protein Bowl
Ingredients:
Oven-roasted half duck (Maple Leaf Farm Roast Half Duck) ($10/half-duck, serves 2*)
1 medium sweet potato (combination of purple and Japanese sweet potatoes)
2-4 servings of assorted pre-cut vegetables (cauliflower, broccoli, zucchini, greens, carrots)
1-2 cloves garlic, thinly sliced

Directions:
Preheat oven 375F. Roast the sweet potatoes for about 45mins. When about 20 minutes remaining in roasting the sweet potatoes, place the ready-cooked duck on another tray and reheat in oven for about 15-20mins (according to package directions, the duck reheats in 375F oven, about 15-20mins). After placing the duck into oven to reheat, prep to steam the vegetables with garlic for 5-8 minutes. When vegetables are done, the duck and sweet potatoes will also be done at the same time. Serve warm.
