Banana Peanut Butter Yogurt Bites

As there were no plans to stock up store-bought ice-cream this summer, I had to find ways to satisfy cold and chilled cravings on hot summer days. I could have made 1-ingredient Banana Ice-Cream again but let's try something different. First, is to use what is already in the kitchen, pantry or fridge. Greek yogurt came to mind, peanut butter as well. And banana as the natural sweetener.

Here comes Banana Peanut Butter Greek Yogurt Frozen Bites. Perfect.


One-Ingredient Banana Ice-Cream 香蕉冰淇淋雪糕

There are a few experiments on my to-try list and ice-cream is one of them. However, I am limited by the lack of an ice-cream machine, so ice-cream has been pushed back, again and again, became the second last item, to even the last item to experiment.


Ever since I got myself a Vitamix blender, ice-cream began to re-surface to top of the list again. Of course, technically this should not be called ice-cream as it has no source of cream (or dairy).

Just one ingredient + one machine. Ice-cream. Yes!

I had my doubts in the beginning but it worked!



Mango Lassi Ice Pops

Savory lassi (made with spices) and sweet lassi.....today it will be sweet with the famous mango lassi...and mango lassi pops!

Frozen mango cubes are used here which have saved the trouble of slicing a mango. Then some plain yogurt into the Ninja Master Prep Professional Blender, Chopper and Ice Crusher: More Power & 2 Times Faster with the mangoes - a homemade mango lassi done within minutes. If the mangoes are not too sweet, add some honey to balance the sour of the lassi.


Churned out too much mango lassi? Don't worry. Freeze them into mango lassi pops and they will be a instant cooler and delight when the weather gets warm and hot.


Blueberry Granita

If I keep having salads and quinoa salads, I don't think I will ever use my Ninja Master Prep Professional Blender, Chopper and Ice Crusher More Powerful & 2x Faster this summer. So my Ninja should be given some airtime. A tweak from the usual watermelon granita is this blueberry granita making use of the frozen blueberries that is already in my freezer. It's all about deconstructing and constructing.



Kale-Melon-Berry Yogurt Popsicles

The last ice popsicle this summer?

For me, personally, these kale ice pops (popsicles) are better than kale chips. I usually make smoothie out of kale and other fruits but decided to make some yogurt-based kale ice popsicles one day.

This is a slight deviation from Dr. Oz Green Monster Drink.  What did I use (or deviate):

Cook's Note: Learn to read your yogurt label. Make sure the major components in your yogurt are Milk and Live Cultures. I do not like aspartame (and/or other sweeteners) in my yogurt. Honey is ok but other sweeteners, preferably not. Also, I do not like low-fat dairies (low-fat milk taste like water! don't you think so?). I enjoy my whole milk and plain whole milk yogurt. :)  oops!
