Roast Duck, Brussel Sprouts, Sweet Potato
This ready-cooked vacuum-packed roast half duck has shown its worth, not only as alternative protein choice in protein/ salad/ grain bowl-meals, but also as main course specials during Thanksgiving and Christmas recently.
Meal preparation is a breeze with this Maple Leaf Farm Roast Half Duck, sold in two individual 14-oz packages (total 28oz, approx. 4 servings, $17) at our local Costco.
As earlier mentioned - effortless to prepare, ready in minutes, this tender and lean mean piece of gourmet bone-in roast duck is very delicious, consider it Michelin-restaurant quality (but I have not tasted any Michelin restaurant dish, so do take this as comparative compliment to superior taste and food quality).

Roast Duck with Brussel Sprouts & Sweet Potato
Ingredients:
Oven-roasted half duck (Maple Leaf Farm Roast Half Duck) ($8/half-duck, serves 2*)
1 medium sweet potato
2-4 servings of Brussel sprouts, rinsed to clean then prepare to halves
Salt, black pepper and extra-virgin olive oil, for the Brussel sprouts
Directions:
Preheat oven 375F. Season Brussel sprouts with salt, pepper, olive oil, then place them on a baking tray. Place skin-on sweet potato in the oven to roast, about 40-45mins. After about 10mins, add in tray of brussel sprouts which will take remaining 30mins to roast and cook. After another 10mins, put the ready-cooked duck on another tray and into the oven, which will take about 15-20mins to reheat. (according to package directions, the duck reheats in 375F oven, about 15-20mins).
*Estimated cost per serving (per person per meal) is less than $8. That is gourmet meal on a budget.
