There is just this chemistry with spicy sausage, bell peppers and onions. So I paired them all up in a Christmasy red and green pasta!
Spicy Sausage and Bell Peppers Pasta
Ingredients: 1-2 spicy sausage, sliced to bite-sizes; 1/4 red bell, sliced to bite-sizes; 1/4 green bell, sliced to bite-sizes, 1 small zucchini, sliced to bite-sizes; ; 1 small carrot, sliced to bite-sizes; 1 medium fresh tomatoes; 1 canned diced tomatoes; 1/2 red onion, sliced to bite-sizes; 2 cloves garlic, finely minced; pinch of turmeric, curry powder, ground coriander; salt and pepper to taste; cooked pasta (2 servings)
Directions: Heat some oil, saute the sausages, onions and carrots, pinch of turmeric, curry powder, ground coriander, combine, fry briskly. When the onions almost turn slightly tender (soft), add garlic, continue to saute. Add tomatoes, combine well in the pan. Simmer at low heat for 5-8 mins. Add bell peppers and zucchini and simmer at low heat till they are cooked and tender. When the entire mixture is cooked, add in cooked pasta and combine well. Salt and pepper to taste. Serve warm.
I actually whipped this up in a jiffy because I wanted to be part of the last Presto Pasta Nights in 2010, hosted over at From Kirsten's Kitchen to Yours. Yes, everyone needs a break, so does Presto Pasta Nights (a recess till 7th Jan 2011, next year!)
