Dijon Mustard Honey Chicken Wings 法式芥末蜜汁烤鸡翅

When I opened that new bottle of whole grain mustard, I was choking from the strong and pungent smell of Dijon mustard. However, when used as a marinade for these honey-Dijon mustard wings, these wings turned perfect without the super-sharp-mustardy kick but with subtle mustard flavors.

If you remember, the drummettes (from the whole wings I bought) were roasted in Honey-Soy Sauce style and now the mid-joint done Dijon mustard style.

Raw honey is used in this Whole Grain Mustard-Honey Marinade recipe. Raw honey is typically unpasteurized and unfiltered has natural enzyme that is beneficial for the body.

However, the heating process during baking will destroy some enzymatic activity in the raw honey. You can use pasteurized honey if you wish. I am only using raw honey here as this is the only kind available in the pantry at this time.

Do you use raw or pasteurized honey ?

Whole Grain Mustard-Honey Marinade (for about 10 chicken wings mid-joint):
1-2 tbsp raw* honey (more honey if you prefer sweeter version)
2 tbsp of whole grain Dijon mustard (Trader Joes Whole Grain Dijon Mustard)
1 tsp minced garlic
2-3 tbsp of finely chopped cilantro

Marinate overnight.

Bake/roast in pre-heated oven at 400F for about 25 mins, flip the wings over half way through roasting to ensure even roasting of the chicken

Enjoy!
