Maitake Mushroom Flatbread Pizza 舞菇比萨饼
The series of flatbread pizza continues...
After an earlier trial with artichoke hearts, pea and corn lavash bread pizza, today's version plays on something more "exotic" - how does Maitake Mushroom Pizza sound? Maitake mushroom is known for its cancer-fighting properties like many other mushrooms. Besides being rich in potassium, Vitamin D, Vitamin B2 and amino acid, it is also a good source of protein and imparts umami flavors to many dishes.

Unlike artichoke, pea and corn pizza in which all you need is to thaw the vegetables then layer on the flatbread, the Maitake Mushrooms Pizza need some kind of saute of the mushrooms together with green onions (bottom white parts, finely chopped) to soften/cook them a little before a quick 10-min pizza-bake in the oven. Most importantly, a light saute also helps bring out the umami flavors of the mushrooms.
Top the flatbread with some cheese (mild cheddar used here), then layer with tomatoes, sauteed mushrooms, then top with more cheese. Bake in pre-heated 395F oven for 10 mins. Sprinkle with green onions (top green parts, finely chopped)
