Kale Tomatoes Pasta with Bacon 羽衣甘蓝,蕃茄,培根意大利面

This is going to be a shocker! It is my first time using bacon at home after so many years of cooking!

Thanks for being sold as bulk - I can just buy 1-2 slices. Thanks for being on sale - two slices cost me $0.65. Thanks for the urge to create some new dishes - crispy bacon atop pasta sounds too good to resist.

Kale Tomatoes Pasta with Crispy Bacon 羽衣甘蓝意,蕃茄,培根大利面
1 smoked bacon, sliced to 0.5-inch pieces
1/2 onion finely diced
2 roma tomatoes, finely diced
5-6tbsp tomato pasta sauce 
3 cloves garlic, finely minced
1/2 yellow or green bell pepper, finely diced
3-4 handfuls of chopped kale
2 servings cooked pasta (fusili)
Shaved cheese, garnish/topping

Directions: On a non-stick pan, fry the bacon till crisp, remove and set aside. Reserve the rendered fat (should be slightly less than 1 tbsp) in the pan. Fry the onions in the rendered fat till slightly caramelized, and softened. Add the tomatoes, pasta sauce and garlic and simmer for 5-8 mins, add kale and bell peppers into the sauce and simmer about 8 mins till flavors are developed and combined. Add in pasta and mix well with the sauce. Serve with bacon toppings and shaved cheese.
