I am pretty much hooked on quinoa. You should have noticed. It is so easy to create a nutritious one-dish meal with quinoa. Plus, cooking quinoa over the stove-top is so much easier (and faster) than cooking rice. The quinoa cooks in just about 10mins.
Work that in parallel with another dish that cooks in the oven e.g. roasted vegetables...
