Savory Soy Milk Tofu (咸豆浆豆腐) + "Behind the Scenes" Cooking

No props. No food presentation. Just sharing photo images today, "caught in action".

This is what happens, in preparation for a fuss-free dinner.

... where every dish is steamed to cooked. YES. EVERY DISH. STEAMED.



1st dish (Steamed "Drunken" Shrimps): Whole de-veined shrimps, marinated with cooking wine, ginger, brown sugar for at least 30 minutes. Before steaming, pour away some of the wine. Add a little water to submerge the shrimps. Add garlic, and cilantro and steam for 8-10 mins.

2nd dish (Steamed Salt and Pepper Asparagus): Steam the asparagus for 8 minutes. After cooked, pinch of ground white pepper to taste

3rd dish (Steamed Zucchini and Bell Peppers with Garlic and Herbs): Steam the veggies (of bell peppers, zucchini, mushrooms, garlic, cilantro) for about 10-12 minutes. After cooked, pinch of sea salt and ground white pepper to taste. To serve with pasta.

4th dish (Savory Steamed Soy Milk Tofu): This version is done with diced tomatoes, mushrooms, nori seaweed, cilantro and unsweetened soy milk. Steam the tofu in unsweetened  soy milk with ingredients (except nori seaweed) for about 5 minutes till slightly warm. Garnish with nori seaweed and dash of sesame oil to the steamed tofu before serving.


The only item not steamed to cook is pasta (not shown here). After the pasta is boiled (cooked), it is first tossed into "essence" of shrimps (from the 1st dish), then tossed with the heap of steamed vegetables (2nd dish with bell peppers, zucchini, mushrooms, garlic, cilantro). Top with steamed asparagus. 1st, 2nd, 3rd dish become one main dish + 1 tofu side dish!
