Sweet and Sour Tofu 酸甜豆腐

This is a tofu dish mimicking the very popular Sweet and Sour Pork (咕嚕肉, a.k.a. Gu Lu Yok in Cantonese) dish. It was not intentionally made vegetarian, just that there were these three ingredients - tofu, green and red bell peppers sitting in my fridge and all I could think of was sweet and sour...something.

Recently, whenever I cook tofu dishes especially those with gravy/sauce or dressing, the trick is to use a small fork to prick holes in the pan-fried tofu so that the tofu gets a fair share of flavors from the sauce while cooking.

Sweet and Sour Tofu 酸甜豆腐
Sweat 3 tbsp finely diced onions till soft and translucent. Then add 1 tsp minced ginger and 1 tsp minced garlic and fry till aromatic. Add finely diced bell peppers and some halved/quartered cherry tomatoes and fry in medium-heat for about 3 mins, then add the pan-fried tofu and mix well. Add about 2-3 tsp of chili sauce and 1 tsp of light soy sauce and fry for about 5 mins till all the flavors are combined.
