Homemade Chicken Rice 鸡饭

The preparation of chicken (Poached Chicken recipe) and the rice is separated into two posts, so that Chicken Rice does not to sound too intimidating when cooked at home. When making chicken rice, it is recommended to cook the chicken before cooking the rice. Most importantly, do not forget the chili sauce (Homemade Chili Sauce recipe).

Chicken rice or shall I say home-style chicken rice is actually not unhealthy; in fact, it can be quite a balanced nutritious meal considered that carbs, proteins and vegetables are all taken care of in this dish. Though I use the word "intimidating", chicken rice is actually not difficult to cook at home.

Homemade Chicken Rice 鸡饭
3 shallots, finely minced
3 cloves garlic, finely minced
2.5-3 cups long-grain white rice (Note: I have used Basmati Rice as it is the "white" rice variety in my home. It worked for me. You can use Jasmine rice), rinse 2-3 times then soak in water for about 30 minutes.
Homemade chicken stock, divided use

Directions: Saute the shallots and garlic till fragrant. Add some stock if mixture is too dry. Add rice, mix well with shallots and garlic. Then add the remaining chicken stock (the amount of chicken stock used will be the same amount as how you would cook rice with water - just that the water is now substituted entirely with chicken stock). Cook the rice over the stove-top for 15-20minutes, till fluff up the rice a little to entire bottom of the rice is not over-cooked and rice is the surface if not under-cooked. Turn to low heat, cover pot, then let it steam/steam for 5 minutes more. Turn off heat. Before serving, gently fluff the rice.

Served with poached chicken, vegetable sides, and very importantly, homemade chili  sauce.
