Black SoyBeans Veggie Bowl

With more antioxidants and protein than other beans, black soybean (the black variety of soybeans) is powerhouse plant-based protein, great for making nutritionally balanced vegetarian veggie bowl-meals or grain bowl-meals.

Black SoyBeans Veggie Bowl
1-2 servings canned organic black soy beans , give it a few rinses with water, then drain away water
3 cups (or more) of assorted vegetables - e.g. cauliflower, kale, green beans
1-2 cloves garlic, thinly sliced or minced
5-6 cherry tomatoes, rinsed
1/2 purple sweet potato (or any variety of your choice), roasted at 400F about 30-40mins till cooked (Cooking/Meal Prep. Tip: As part of meal prep., roasting can be done a few hours in advance before the actual meal. I usually roast the sweet potatoes in the morning. then set the cooked sweet potatoes aside before heading out.  When home at lunch time, all that is required is steam the veggies, set up the salad bowl meal and lunch can be ready in less than 15 mins).

Directions: Steam the vegetables with garlic for 5 minutes. Layer the salad bowl with steamed veggies, beans, tomatoes, roasted sweet potato and hard-boiled egg
