Sheet-Pan Mahi Mahi Asparagus Peppers

Doubling on the winning streak of Sheet-Pan Turkey Egg Cup Asparagus is this easy and delicious Sheet-Pan Meal Mahi Mahi Asparagus Bell Peppers.

Fortunate to find frozen Mahi-Mahi fish already in cubes that are ready to use with thawing - this is how a healthy and balanced meal comes together, fuss-free, in less than 30 minutes.


Mahi Mahi were lightly seasoned with spices - a combination of curry powder, garam masala, turmeric, black pepper - one of my favorite spice combo. for oven-roasted fish.


Sheet-Pan Mahi Mahi Asparagus Peppers
Ingredients:
2 servings of Mahi Mahi fish, previously frozen, thawed before use. Option to use fillet instead of cubes. Option to use other fish fillet e.g. tilapia, rock cod
1 bell pepper, sliced to bite-sizes
Bunch of asparagus, sliced to finger-lengths
Pinch of curry powder, garam masala, turmeric, black pepper for the fish
Pinch of salt, pepper for veggies
Olive oil

Directions: Preheat oven 375F. Layer the ingredients as shown. After seasoning, drizzle some olive oil on the ingredients. Bake/roast for about 25mins till fish and veggies are cooked.
