Cottage Cheese Veggie Egg Frittata
Whisk 2 eggs, with shredded carrots, sliced green onions, Italian seasoning, cottage cheese till combined, then pour into a mold. Bake in 375F preheated oven about 25mins till eggs are cooked (and set).
