Sausage & Peas Fried Rice - 香肠豌豆炒饭
We had delicious Korean food (Soondubu and seafood pancake) at Jang Su Jang in Santa Clara the other day and brought home the only food that was left - rice.
As there was just about one serving of leftover rice, the best way to go was to bulk it up, make fried rice and turn it to almost two servings of food.
Other than grilling these sausages, they can also be sliced to smaller pieces, sauteed with vegetables as a side-dish e.g. Spicy Sausage with Chard or perhaps add this side to pasta e.g. Sausage and Kale Pasta for a one-dish meal. If you prefer the carbs-of-the-day to be rice, then throw in some veggies for one-dish fried rice.
Brawurst Sausage & Peas Fried Rice 香肠豌豆炒饭
Ingredients:
One serving or one bowl rice (leftover) mixed into 1 whisked egg - make sure rice coated with egg
1 pork brawurst sausage (abt 0.5lb ground meat mixture) - no nitrates. If not using sausage, use any ground meat to substitute
1-2 small shallots, finely sliced
1/2 jalapeno, finely diced
1 clove garlic, finely minced
Handful frozen peas, thawed
2 green onions, finely sliced
Directions: Cut up the sausage and pan-fry till cooked, rendering the fat at the same time. Dish out the sausage. Fry the shallots and jalapeno in the fat till shallots turn soft. Add garlic and fry till fragrant add the rice mixture and sausages and fry for about 10 mins till the rice turns golden-yellow (egg is cooked), mix well in the frying process. Add peas, fry and mix well. Add green onions. Pinch of sea salt and white pepper to taste
