Snap and Snow Peas Stir-Fry with Broccoli 清炒豌豆丝
Usually, either snow peas or snap peas (what is their difference ?) get its own feature and attention in one single dish. But I have both types of peas, in small (odd) quantities that, if left in a world of their own, make a lesser-than-one-serving vegetable dish.

This Snap and Snow Peas Combo Stir-Fry is such a wonderful combination of flavors. Best of all, it solves the "odd" quantity problem, and makes both snow and snap peas THE star, in a single dish.
Another way to handle small (odd) quantity of ingredients is to use them as "addition" to fried rice e.g vegetable scraps fried rice or noodles.
Snow and Snap Peas Stir-Fry with Broccoli 清炒豌豆丝
Ingredients:
5-6 fresh shiitake mushrooms, thinly sliced
3-4 cloves garlic, finely chopped
2 green onions, finely chopped
1 red chili, thinly sliced
1/2 cup carrots pieces
20 snap/snow peas or mixture, thinly sliced
Handful of organic broccoli florets
1-2 tsp soy sauce
Salt and ground white pepper to taste
1 tsp of sesame oil
Directions: Heat some oil in the pan. Fry the garlic, green onions, red chili, carrots for 2-3mins, then add mushrooms and fry till slightly tender. When mushrooms reduced in volume and cooked, add in broccoli, snap and snow peas then soy sauce and give it a good mix/stir-fry. When the mixture is cooked, add ground white pepper and salt to taste. Finish it off with sesame oil and turn off the stove.
