Basil Walnut Pesto Mushrooms Pasta
Even the simplest sauté of crimini mushrooms tossed with pesto e.g Basil Walnut Pesto (vegetarians, this one's for you), tastes as delicious as Pesto Chicken and Pesto Salmon.
Do you feel what I feel? (oh, that Christmas song "Do you hear what I hear?" continuously lingering over my ears these days).
While a nut-free, dairy-free (meaning, no cheese) is in my next to-do list where pesto is concerned, today, just let us embrace yet another nutty cheesy pesto-centric (e.g. Basil Walnut Pesto) dish.
Basil Walnut Pesto Mushrooms Pasta
Ingredients:
5oz sliced crimini mushrooms
1tbsp pesto (homemade or store-bought)
2tbsp of whole milk
1 serving of pasta, Angel Hair/Capellini in this case
Directions: Add 1-2tsp cooking oil to the pan, and saute the mushroom till they are tender and cooked. This will take about 8 minutes or more for the mushrooms to caramelize and flavor up. While cooking the mushrooms, cook the pasta. When the mushrooms are cooked, add in pesto, milk (or cream) and give it a good stir with the mushrooms, then add the drained pasta and give it another good toss to mix everything - sauce, mushrooms, pasta. Serve alongside this easy and healthy garlic spinach.
