Egg Guacamole English Muffin

As the pantry did not have tortilla chips in order for guacamole (see Easy Homemade Guacamole) to serve its purpose as a dip (also see Sardine Cheese Dip), the guacamole is used here as a condiment or dressing-spread (option to use Homemade Pesto as dressing-spread) for this homemade egg English muffin.

Now, does this look like delicious breakfast? Breakfast for lunch or light weeknight dinner, anyone?

This is not regular breakfast in our family (check our typical family breakfast). But once in a while, when the mood kicks in and ingredients are in place, such breakfast comes timely.


Egg Guacamole English Muffin
Ingredients:
1 store-bought whole wheat English muffin
2 tbsp of homemade guacamole
1 organic egg
Organic cherry tomatoes
Pinch of Japanese 7-spice powder (Shichimi Togarashi), optional. Or use salt and pepper

Directions: Lightly toast the muffin to warm it up. Fry the egg, top on muffin. Serve with guacamole, and organic cherry tomatoes. Pinch of spice powder on the egg, before serving.
