Dates Peanuts Energy Snack Bites

Medjool and Deglet Noor dates are good sources of potassium and a form of simple sugars that can be easily consumed after exercise to quickly replenish energy in the body.


Personally, dates as they are, are too sweet (for me) to snack on. But I have found a way to use them in these homemade energy bites as healthy workout snacks e.g. Hazelnut Oats Energy Balls, Pumpkin Seeds Stuffed Dates.
Dates are great as natural sweetener instead of honey or maple syrup - both not found in my pantry.  I try to use whatever is available in my pantry, which is also an opportunity for me (and you) to exercise creativity and make something whimsical and experiment with techniques and flavors.



Dates and Peanuts Energy Balls/Snack Bites
makes about 10-12 bite-size balls

Ingredients:
1 cup quick oats
8-10 Delget Noor pitted dates, soaked in 4tbsp water for about 10mins to soften. Remove the dates. Keep the water for making flaxmeal "binder"
2tbsp flaxmeal + 4tbsp water (water that was used to soak the dates)
1/3 cup roasted unsalted peanuts, crushed to small bits and pieces using food processor (or mortar and pestle). Option to use other nut varieties/mixed nuts
3 tbsp peanut butter powder (PB fit) - option

Directions: Blitz nuts to small pieces with a few pulses using food processor or mortar and pestle. Remove the crushed nuts, set aside. Mash the softened dates and mix with the oats mixture, while adding the flaxmeal binder, and kneading at the same time till a huge ball forms, then make smaller balls out of this.
