Chicken Soup Wontons/ Dumplings 鸡汤云吞

This is another one-dish meal which saves me the trouble of cooking the noodle ("carbs") accompaniment. With homemade wontons (shared and given by my "wonton expert" friend), all I had to do was to cook a big pot of chicken soup with potatoes, carrots, tomatoes.

A big pot of chicken soup is "double-duty" (1) make stock/broth that can be used for cooking other dishes; and (2) prepare the actual meal.

Boil 5-6 organic chicken drumsticks with ginger and onions for about 45 mins, then simmer on medium heat for about 15 mins. It will be quite a concentrated chicken stock if you did not start with a lot of water in the first place. Remove almost about 1/4 or 1/2 the quantity of liquid as the pure chicken stock. The chicken stock (concentrated) is done. Store in airtight container for future use in cooking..
Then with the remaining liquid in the pot, add the same amount of water back to the pot - the same amount you have removed as stock earlier. Add 1 big carrot chopped to bite-size and 4-5 edges of tomatoes and boil for about 30 minutes till the carrots are cooked. Add 1 medium potatoes chopped to bite-size and boil for another 20 minutes till the potatoes are cooked. Salt and pepper to taste.

Serve with wonton/dumplings to make it a meal.
