Chicken Soup Wontons/ Dumplings 鸡汤云吞
This is another one-dish meal which saves me the trouble of cooking the noodle ("carbs") accompaniment. With homemade wontons (shared and given by my "wonton expert" friend), all I had to do was to cook a big pot of chicken soup with potatoes, carrots, tomatoes.

A big pot of chicken soup is "double-duty" (1) make stock/broth that can be used for cooking other dishes; and (2) prepare the actual meal.

Potatoes and Carrots Chicken Soup Wontons/ Dumpling 鸡汤云吞
Boil 5-6 organic chicken drumsticks with ginger and onions for about 45 mins, then simmer on medium heat for about 15 mins. It will be quite a concentrated chicken stock if you did not start with a lot of water in the first place. Remove almost about 1/4 or 1/2 the quantity of liquid as the pure chicken stock. Then with the remaining liquid in the pot, add the same amount of water back to the pot - the same amount you have removed as stock earlier. Add 1 big carrot chopped to bite-size and 4-5 edges of tomatoes and boil for about 30 minutes till the carrots are cooked. Add 1 medium potatoes chopped to bite-size and boil for another 20 minutes till the potatoes are cooked. Salt and pepper to taste.
Serve with wonton/dumplings to make it a meal.
