This Homemade Indian-Style Hairy Melon Stew is somewhat a simplified version of Sambar.
Homemade Indian-Style Hairy Melon Stew
As simple as hairy melon, split peas and tomatoes in aromatics of onions, garlic, ginger, curry leaves, cumin, dash of coriander and ground turmeric - that's basically it. Salt to taste and generous garnish of finely chopped cilantro.
It is really a light stew that nevertheless warm us inside out in the cold autumn nights.
Heat some oil in pan and aromatize curry leaves. Set aside. In the same oil, aromatize the cumin seeds and aromatize the onions and ginger. Fry the onions till partially soft, then add garlic. Add yellow split peas, tomatoes, coriander and turmeric powder, and water, and boil till split peas become soft and tender. This will take about 20 minutes. When the split peas have turned soft, add the hairy melon and simmer on low-medium for about 15 minutes till hairy melon is cooked. Add in curry leaves, cilantro and give it a good stir. Salt to taste.
