Broccoli, Potato, Chicken Quinoa Bowl
The lunch bowl today is similar to this healthy and delicious Broccoli, Cauliflower, Chicken Quinoa Bowl. Routine might not be be a bad thing after all.
Batch-cooking quinoa and chicken breast leftovers are all part of meal preparation and that really got me into the groove of such a meal combination (or shall I say, post-workout worthy meals).
Come meal time, all we need is re-heat the leftovers, roast some sweet potatoes or potatoes and steam fresh vegetables (Note: Steaming vegetables is a gentle quick-cooking method that maintains vegetables' nutritional value and beautiful color).
Steamed Baby Broccoli, Roasted Potatoes with Quinoa and Chicken
Ingredients/Components:
[Vegetables]: Garlic steamed broccoli , red cabbage
[Whole grains]: Tricolor quinoa, cooked according to package instructions
[Protein]: Shredded chicken plus hard-boiled egg (vegetarian: omit the chicken)
Directions: Assemble as shown. Drizzle with easy homemade golden dressing.
[Meal preparation tips]: Components such as quinoa has been pre-cooked in a batch (2-3 days' supply), hard-boiled eggs prepared in advanced (5 days' supply) and chicken are leftovers. The quinoa and chicken can be warmed up/re-heated before consumption on the actual day. The dressing can also be made a few hours in advance.
