Pumpkin Squash, Apples, Chicken Salad Bowl
It's autumn and that means pumpkin squashes, apples, pears and persimmons.
Today, this hearty and filling bowl-meal is built from assorted veggies and fruits including autumn pumpkin squash and apples.
Pumpkin Squash & Apples, Chicken Veggie Bowl
Ingredients:
1/2 squash (your choice - Butternut, Kabocha, Delicata), sliced to bite-size
About 3-4 servings of mixed vegetables of your choice e.g. broccoli, green beans, red cabbage
2-3 cloves garlic, minced
Leftover chicken breast
1/2 organic apple, sliced to thin wedges
1/2 avocado
[Dressing]:1 clove organic garlic, smashed and minced, 1 tbsp organic cider vinegar, 2-3 tbsp extra-virgin olive oil, dash of ground turmeric, dash of freshly ground black pepper, squeeze of lemon (option) to zest it up a little
Directions:
Preheat oven to 400F. Toss squash slices with olive oil, dried oregano, salt and ground black pepper. Arrange on baking sheet and roast about 25mins until fork tender. Halfway roasting the squash, start steaming the vegetables with garlic for about 5mins + steam the leftover chicken on the same tray with the veggies. When done, layer the base of the salad bowls with colorful steamed vegetables and topped with roasted pumpkin squash, chicken, apples, avocado. Drizzle dressing over and enjoy!
