Zucchini, Feta Cheese Turkey Burgers/ Patties

Dry? Lack of flavor? That's often associated with ground turkey of lower fat content; but these turkey burgers made from lean ground turkey are not. Instead, they are moist, juicy and so delicious because they are made to be - using onions, zucchini and roasted mushrooms, and a secret ingredient (not-so-secret following this post) - Feta Cheese!

They make great burgers and sandwiches as well. Onions, zucchini, roasted mushrooms add moisture and naturally flavors the patties, while feta cheese imparts briny taste and depth with minimum use of salt. These patties are now more nutrients-dense (more fiber, more protein, more calcium) from the vegetables, mushrooms, and cheese.


Homemade Turkey Patties/Burgers
Ingredients:
1 pound ground turkey
1 small zucchini, grated
1 small onion, finely diced
1/2 cup crumbled feta cheese
Enoki mushrooms, roasted/cooked and finely chopped (optional)
Dash of curry powder, ground turmeric, ground black pepper
1-2 tbsp olive oil

Directions: Mix ground turkey, zucchini, onion, mushrooms, cheese, spices and form into palm-sized patties (1 pound makes about 4 burger-size patties). Place patties on oiled-parchment paper that lines the baking tray. Preheat oven 375F. Cook the patties in oven for 30 minutes or more, depending on thickness of patties. If you prefer thick patties, roast it longer in the oven.
