Pumpkin Squash & Seafood Veggie Bowl

Forget about slicing through those hard-shelled pumpkins, have Delicata Squash on-board and breeze through pumpkin season. As it is a relatively smaller squash, you do not have to think hard about storing unused portions. Buy it fresh, use it up, then buy it again.

Though Kabocha Squash remains my favorite squash in terms of versatility and flavor (check these recipes: Kabocha Squash Pumpkin Rice, Kabocha Squash, Okra, Green Beans Stew, Kabocha Squash Millet Congee), Delicata Squash is a convenient choice when preparing one or two servings meals.

With vegetables and roasted pumpkin squash (Pumpkin Squash Veggie Salad Bowl) as the base, I have prepared similar veggie bowls to pair with chicken Pumpkin Squash Veggie Bowl with Chicken and roasted salmon (below) - choice of Pesto Salmon or Dijon Mustard Salmon.

This has also been extended to grain bowls - prepared with quinoa, steamed vegetables, roasted squash paired with "poor man's" sardines or "rich man's" lobster.

Delicata Squash Quinoa Grain Bowl with Roasted Sardines

Pumpkin Squash & Seafood Veggie Grain Bowl
1 Delicata squash, sliced 3/4 -inch thick
About 3 servings of mixed vegetables of your choice e.g. broccoli, cauliflower, kale, green beans, snow or snap peas, beets
2-3 cloves garlic, minced
Choice of roasted salmon e.g. Pesto Salmon or Dijon Mustard Salmon or sardines

Preheat oven to 400F. Toss squash slices with olive oil, dried oregano, salt and ground black pepper. Arrange on baking sheet and roast about 25mins until fork tender. Halfway roasting the squash, start steaming the vegetables with garlic for about 5mins. Layer the base of the salad bowls with colorful steamed vegetables and topped with roasted pumpkin squash, and roasted salmon or sardines.
